The Chinuch explains that the days of Sefira are preparations for Shavuot, accepting the Torah. Harav Aharon Kotler zt”l asks if that’s the case, why do we start counting specifically from the Omer? What connection is there between bringing the Omer offering and accepting the Torah? Harav Aharon answers the Omer offering came to show and teach that everything is from Hashem. It was the very first harvest of the season. One had to take the first harvest and bring it to Hashem in Bait Hamikdash. This helps us internalize bitachon in Hashem. Without bitachon, the world can become very stressful especially when pursuing parnassa. But one realizes Hashem is running his life and he just needs to put in the effort, one can accept the Torah more readily without any stress.
